STRIPER FILLETS AU GRATIN

1lb Fresh skinless Striper Fillets
1/4 cup fine dry bread crumbs
2 teaspoons snipped fresh dill or 1/2 teaspoon dried dill weed
1/4 teaspoon dried Tarragon crushed
1/4 teaspoon Lemon Pepper seasoning
1/2 cup Shredded Cheddar (or other) cheese (2oz)

Cut fish fillets into four nice serving size portions. Rinse and pat dry with paper towel. Place fish fillets in a shallow baking dish and set aside.

In a small bowl combine bread crumbs, dill, tarragon, and lemon pepper. Spoon bread crumb mixture over fish. Bake uncovered in a 400 degree oven for 20 to 24 minutes or until fish flakes easily with a fork. Sprinkle with cheese. Bake 3 to 6 minutes more or until cheese melts.

Makes 4 servings

Grandma's Pan Fried Striper

Cover Striper filets in buttermilk for 1 or 2 hours - mix 3/4 popcorn cornmeal to 1/4 flour.

Take Filets out of buttermilk and roll in popcorn cornmeal and flour. Pan fry in about one inch of oil until golden brown.

This popcorn cornmeal is very good breading. It really makes a difference in the taste of fried fish or pork chops. It also makes great cornbread!!!

Grandma's Striper Cakes

1 Pound-Striper-Steam or Boiled
1 Pound-Crab meat-Canned or Fresh
4 Tablespoons-Mayonnaise
4 Tablespoon-Old Bay Seasoning
4 Teaspoon-Parsley Flakes
1 Teaspoon-Yellow Mustard
2 Eggs

Enough bread crumbs to make stick together. I use the seasoned bread crumbs in the can.

Pan fry until Brown. These are all so good rolled in bite size balls and Deep fat fried.

These balls are very good dipped in KC Master Piece Honey Dijon Dipping Sauce.

Grandma's Striper Salad

4 Cups-Striper
1/2 Cup-Chopped Celery
1/4 Cup-Chopped Onions
1/2 Cup-Chopped Water Chestnuts
1/2 Cup-Crushed Pineapple Or Pineapple Tidbits
1 Cup-Hellmanns Mayonnaise
1/2 Cup-Sour Cream
1/4 Cup-Salad Pickles
1 1/2 Tablespoon- Sugar
1/2 Teaspoon-Old Bay Seasoning
1/4 Teaspoon-Dill Weed
Salt & Pepper For Taste!

Cube Striper and boil in water or beer with Old Bay Seasoning - Until Done! Drain and let cool - When cool Flake with fork - Mix all other ingredients and add with fish

This salad is also very good Stuffed in the Jumbo Pasta Shells with drizzle sauce over it.

Drizzle Sauce

1/4 Cup-Sour Cream
1/4 Cup- Sugar
1/4 Cup- Vinegar
2 Tablespoon-Mayonnaise
1 Teaspoon-Celery Seed
1 Teaspoon-Onion Powder
